The current front-runner for the Taco of the Year is a Tandoori Al Pastor—a fusion of traditional Lebanese-Mexican pork preparation with Indian spices, served on a blue corn tortilla. It’s a preview of the massive food tourism boom expected this summer, proving that Mexico’s food scene is as innovative as it is traditional.
